You can run network and telephone using same cable if you
are lucky, but those can cause interference to each
other. 10 Mbit/s Ethernet and telephone could work on
same cable (I have seen that). I would not recommend that.
If you are runnign 100 Mbit/s I highly do not recommend
this kind of practice of putting data and telephone to
same set of wire pairs.

My recommendation is that you run two CAT5 cables to
your garage. Use on of them for telephone and other for
data. With this paractice you get everyhting working
nicely without any special trucks. So you get 
easy of use, reliabity and room for future extensions
(for example more lines etc.) if you wire two
CAT5 cables instead of one.
