The CD-ROMs typically have a heaphone output in front panel. And analogue audio output connector on the back of the drive (goes to soundcard normally). You can wire the outputs of this analogue audio output directly to RCA output connectors (to be hooked to your stereo system). Other things you need to do is to provide regulated +5V and +12V to the CD-ROM power connector. If the CD-ROM has necessary buttons on the front panel, those usually work and provide the control functions. If there are no fron panel buttons for all you want, then you need to build some elctronics which can control the CD-ROM through it's IDE connector.
