Those normal Cisco IP phones as far as I remeber and checked
form the web seem to have "normal" wire from the base device
to handset (wtire that can be conencted and uses RJ-14 connectors).
My advice is to try a normal telephoen recording adapter which
plughs between the handset and the telephone itself. It most
propably works, but can't be for sure because I have not
tried that myself.

The information on RJ45 jack is completely digital signal,
it is H.323 over TCP/IP over Ethernet card. Pretty complicated
stuff to decode...

Ethernet tapping device to PC with Ethernet card, then
some modified Ip phoen software to tap call might be
possible if there is not too much encryption used
in IP calls...

One idea: Make a conference call where there is third IP
phone device in the call. A one you can easily connect your
recorder (phone with record output or PC with sundcard and IP
phone software).
