When considering audio/video field I have one idea: Flat panel displays.
The current status of flat panel displays, application areas, technology behind them (LCD, plasma, OLED, etc.), compare their properties to CRT displays, what effect they have had on video interfaces (modern digital interfaces came to picture), what kind of signal processing / electronics is inside the monitor, what are the newest flat panel technologies just came or coming soon etc..

Another idea is digital TV broadcasting, including HDTV, IPTV, TV programs to cellular phones boardcasting etc... convergence of data communications and broadcasting world where you can carry digital video over data networks (Ethernet, ADSL, TCP/IP) and carrying data on digital TV broadcast signal (data broadcasting, DOCSIS cable modems etc..).

Both of those topics have progressed greatly over last few years. And there is lots of things on those you can concentrate. You could easily make a day long seminar around those topics without running out of the content.
